Flat Bread Pizzas

For the Crust:

  • 3 cups All-Purpose Flour

  • 2 teaspoons baking powder

  • 1 1/2 teaspoons salt

  • 3 tablespoons olive oil or vegetable oil

  • 1 cup ice water

  • 2 to 3 tablespoons vegetable oil, additional for frying

Instructions

  1. Place the flour, baking powder, and salt in a large mixing bowl and stir to combine.

  2. Add the oil and ice water, and mix to make a soft, cohesive dough. Adjust with flour or water as needed. The dough should be moist but not sticky. Cover with plastic wrap, and let rest for 10 minutes.

  3. Preheat a heavy-bottomed skillet on the stovetop. Add 1 tablespoon oil and heat until the oil starts to shimmer in the pan.

  4. Divide the dough into 10 to 12 equal pieces. Each piece should weigh about 1 1/2 to 2 ounces, about the size of a large egg. Dredge each piece in flour, and roll to a rough circle or oval, about 1/4" thick. OR hand shape the pieces by flattening between your palms.

  5. In batches, fry the flatbreads in the hot oil for 2 to 3 minutes, or until golden brown. Flip and fry on the second side for another 2 minutes. Transfer from the pan to a rack to cool slightly before serving. Add more oil as needed for frying successive batches.

For the Sauce:

  • Small can of crushed tomatoes

  • 2 table spoons of tomato paste

  • Olive oil

  • 1-2 clove of garlic

  • Dried oregano, basil and rosemary - optional

  • Salt and pepper


Heat 2 tablespoons of oil in a large sauce pan. Mince the garlic and fry in the pot for 1-2 minutes. Right before it begins to brown, pour in the strained tomatoes and mix well. Add 2 tablespoons of tomato paste and simmer for 10 minutes. Add the spices and some salt and pepper to the sauce and taste. Cook for a few more minutes.


For Assembly:

2 cups shredded mozzarella cheese Toppings: mushrooms, peppers, olives, onions


Preheat oven to 400 degrees. After you have prepared all the flat breads, spoon about a tablespoon of pizza sauce on each flat bread and spread, sprinkle with the cheeses and place toppings.

Place on a cookie sheet and bake for 6-8 minutes until the cheese is bubbly. Remove from oven, let cool for a few minutes before serving.


Chocolate Molten Cakes


8 ounces semisweet chocolate

10 tablespoons unsalted butter

1/2 cup flour

1 cup sugar

3 eggs

3 egg yolks

1 tablespoon vanilla extract

Instructions:

Preheat oven to 420 degrees. Grease 12 muffin pan or line with muffin liners.

Melt the chocolates and butter in the microwave, or in a double boiler.

Add the flour and sugar to chocolate mixture.

Stir in the eggs and yolks until smooth. Stir in the vanilla.

Divide the batter evenly in the muffin pan.

Place in the oven and bake for 12-14 minutes. The edges should be firm but the center will be runny.

Run a knife around the edges to loosen and invert onto dessert plates.
