Fish Sticks and Pickles


Fish Sticks

  • 3/4 cup bread crumbs or panko

  • 1/2 teaspoon salt

  • 1/2 teaspoon sumac or paprika

  • 1/2 cup all-purpose flour

  • 1 large egg, beaten

  • 1 tablespoon mustard

  • 3/4 pound cod fillets, cut into 1-inch strips

  • 1 tablespoon lemon juice + 1 teaspoon zest

  • 2 tablespoons vegetable oil

PREPERATION

  1. Preheat oven to 400°. In a shallow bowl, mix bread crumbs and seasonings. Place flour and egg + mustard in separate shallow bowls.

  2. place fish pieces in lemon juice and zest. Dip fish in flour to coat both sides; shake off excess. Dip in egg, then in crumb mixture, patting to help coating adhere.

  3. Place on a parchment paper lined baking sheet. Drizzle or spray with oil. Bake 10-12 minutes or until fish just begins to flake easily with a fork, turning once.
