Baked Falafel Patties





Ingredients

2 1/4 cups soaked chickpeas (dry chickpeas, soaked overnight or for at least 10 hours)

1 cup coarsely chopped cilantro

1/2 cup coarsely chopped parsley

1 medium onion, chopped

5-7 garlic cloves

1 teaspoon baking soda

1 teaspoon ground cumin

1/2 teaspoon smoked or sweet paprika

1/3 cup oats

2 tablespoons vegetable oil

1/2 teaspoon ground pepper

1 teaspoon salt







Instructions

  1. Preheat oven to 350 degrees and line a large sheet pan with parchment paper. brush parchment paper with oil. Set aside

  2. Place all ingredients in a food processor and pulse until a smooth paste forms.

  3. Using a cookie scooper, scoop some of the mixture and place on oiled sheet pan. press down gently to form patties. Alternatively, wet hands to form patties. Make sure you have about 1.5 inches between patties.

  4. Bake in the oven for 15 minutes, then take out, flip and bake for another 5 minutes.

  5. Serve warm or at room temperature with hummus, pita and salad.
