Cheese and Herb Upside Down Tarts


1 sheet of puff pastry (remove from freezer at least 20 minutes before using)

1/4 cup mixed fresh herbs (chive flowers, chives, oregano, thyme, basil)

1/2 cup soft cheese such as goat cheese or cream cheese

2 tablespoons olive oil

2 tablespoon balsamic reduction

1/4 teaspoon salt

1/8 teaspoon pepper

1 egg


  1. Preheat oven to 375 degrees.

  2. On a large pan sheet lined with parchment paper, brush 8 spots with some olive oil and then dot with balsamic reduction.

  3. Place a chive flower on each spot, and sprinkle other herbs and salt

  4. Crumble or spoon about 1 tablespoon of cheese on top of the herbs.

  5. Cut up the puff pastry into 8 pieces and cover each spot of herbs and cheese with the dough.

  6. brush the top of the dough with egg wash and use a fork to score the edges of each tart.

  7. You may sprinkle extra herbs or chive petals on each tart

  8. Bake for 20 minutes or until golden brown and puffed up.

  9. let cool for 3-5 minutes, then turn over and serve hot.
