Broiled Salmon

1/2 cup lemon juice

3 tablespoons butter

4 tablespoons grated shallots or onion

1/2 teaspoon salt

1/4 spoon fresh ground pepper

1 1/2 tablespoons brown sugar or maple syrup

1 teaspoon dry mustard (or 2 tablespoons mustard)

2 pounds of salmon pieces, either steaks or slices

2 tablespoons parsley or scallions or chives, chopped


preheat broiler. place salmon pieces in small baking dish. mix all the ingredients except the fresh herbs. pour half the mixture over the salmon. broil about 15 minutes, basting frequently with remaining juice mixture, until fish flakes easily. remove from oven. sprinkle with fresh herbs before serving.
