2 tbsp pesto (we will make this during the class: one bunch of any greens - basil, kale, parsley, carrot tops - , 1/4 cup oo, 1/2 cup grated pam cheese, 2-3 garlic cloves, s+p).
finely grated zest 1 lemon
1/2 cup fresh breadcrumb
4 white fish fillets, such as cod or haddock
Heat oven to 400 degrees. Mix the pesto, lemon zest, then stir in the breadcrumbs.
Lay the fish fillets on a baking tray, skinside down, then press the crumbs over the surface of each piece. Bake in the oven for 10-12 mins until the fish is cooked through and the crust is crisp and brown.
