Mini Apple Pies

  • Pie Dough:

  • 2 1/2 cups all-purpose flour, plus more for dusting

  • 1/2 TB granulated sugar

  • 1/2 tsp sea salt

  • 1/2 lb. COLD unsalted butter (2 sticks) diced small

  • 7 TB ice water (7-8 TB)

  • For the Filling:

  • 3 Apples, peeled, cored and finely diced (I used a mixture of granny smith and gala)

  • 1/4 cup granulated or cane sugar

  • 2 1/2 TB of all-purpose flour

  • Zest of half an orange

  • 2 Tsp Lemon juice

  • 1 tsp Ground Cinnamon

  • 1/8 tsp sea salt

  • Egg wash for brushing

  • Raw sugar for sprinkling over pies

Cooking Instructions

To make the dough: 1.Place the flour, sugar, salt into the bowl of food processor and pulse a few times to combine. 2. Add cold diced butter and pulse the mixture until coarse crumbs for with some pea-sized pieces then stop mixing. Mixture should remain dry and powdery. 3. Add the 7 or 8 Tb of ice-cold water and pulse until moist clumps or small balls form. Press a piece of dough between your fingertips and if the dough sticks together, you have added enough water. You do not want to add too much water it will be too sticky to roll out. 4. Transfer the sough to a clean work surface and gather dough together into 2 balls. The flatten them out into discs and cover with plastic wrap. Put them in the fridge for at least an hour to chill. 5. Once the dough is ready, take the dough out of the fridge and roll on a clean surface, dusting with some flour. Roll out to 1/4 inch thickness and then using a 4-inch round cookie cutter and 3 inch cutter, cut out rounds. One will be for the bottom of the muffin tin, and one will be for the top of the apple pie. The larger one will be for the bottom of the muffin tin. 6. Make sure to spray the muffin tin well with avocado spray so the apple pies will come out easily.

To make the filling and finish baking: 1. Add all the ingredients into a medium size bowl and mix together well. Once this is all done add a little filling in each one and top with the smaller circle of dough. Pinch all the sides together so both pieces of dough meet. Brush the tops with some egg wash and sprinkle with some raw sugar. 2. Bake for about 25-30 min or until golden brown. Allow to cool before serving. 3. ENJOY!!!!
