Egg Wraps

Ingredients

4-5 large tortillas

5-8 eggs

1/4-1/2 cup milk (depending on amount of eggs)

1-2 avocados

1 cup shredded cheddar cheese

1/2 teaspoon salt

1/4 teaspoon pepper

spices for your eggs: anything from turmeric and cumin to dry herbs


Directions

  1. Warm up the tortillas on a large skillet or griddle.

  2. Crack eggs into a bowl, stir in milk, salt pepper and spices , and whisk well.

  3. In a large frying pan, cook the eggs scrambling them often. Cook until eggs are no longer raw, but do not dry them up. remove from heat.

  4. Place each tortilla on the griddle sprinkle 2 tablespoons of cheese on the center. Spoon some of the egg on top and top off with some avocado slices.

  5. Wrap the tortilla, top and bottom first and then one side into the center, and roll out to the last side. Place folded parts on the bottom. Let crisp and then flip over for another 2-3 minutes. Repeat with the erst of the tortillas.
