Wild Blueberry Baked Oatmeal Muffins



Recipe Adapted from Ricotta Berry Oatmeal Cups


(Makes 12)

Ingredients: 

  • 3 cups oats

  • 2 teaspoons ground cinnamon

  • 1 1/2 teaspoons baking powder

  • 1/4 teaspoon table salt

  • 2 cups milk

  • 1/2 cup unsweetened applesauce

  • 1/4 cup pure maple syrup (plus more for serving, if desired)

  • 1 teaspoon pure vanilla extract

  • 1/2 cup wild blueberries


Instructions:

  1. Preheat oven to 350 degrees F. Coat muffin tin with cooking spray and set aside.

  2. In a large bowl, mix oats, cinnamon, baking powder, and salt.

  3. Add milk, applesauce, syrup, and vanilla to the bowl and stir well to combine. Fold in wild blueberries.

  4. Pour oatmeal mixture into prepared muffin cups and bake for 15 to 20 minutes until completely set. 

  5. Remove baked oatmeal from the oven and allow to cool for 5 minutes before serving. Serve topped with powdered sugar or maple syrup, if desired.
